​Starting the day with a vegetarian buffet means having access to energizing and wholesome options that fuel your body.  Morning dishes include:

​

  • Tofu scramble with vegetables: A protein-rich alternative to scrambled eggs, often seasoned with turmeric and herbs.

  • Overnight oats and chia pudding: Served with fresh fruits and nuts for a nutrient-packed breakfast.

  • Fresh fruit platters: Seasonal fruits sliced and ready to enjoy.

  • Whole grain breads and spreads: Including hummus, avocado, and nut butters.

  • Smoothies and fresh juices: Made from a variety of fruits and leafy greens.

     

Midday Meals That Satisfy and Refresh

 

At lunchtime, the buffet shifts to more substantial dishes that combine taste and nutrition. 

  • Grain bowls: Featuring quinoa, brown rice, or couscous with roasted vegetables, beans, and flavorful dressings.

  • Fresh salads: From classic garden salads to more adventurous options like kale with roasted chickpeas and tahini dressing.

  • Vegetarian wraps and sandwiches: Filled with ingredients like grilled vegetables, falafel, or marinated tofu.

  • Soups: Such as lentil, tomato basil, or vegetable minestrone, perfect for a light but filling meal.

  • Cold pasta salads: Made with whole wheat or legume-based pasta and tossed with fresh herbs and vegetables.

  2. Hot Station – 3–4 hot vegetarian mains

  5. Dessert Station – plant-based sweets

  6. Beverage Station – infused water, tea

👉 Keep it 30–40 items max. More than that kills margins.
